Here are what you will need to make this roasted vegetable seasoning mix:

Paprika- I use the regular paprika but you can use smokey or hot paprika if you prefer.
Onion granules- This can be substituted for onion powder. Same great taste.
Garlic granules- Just like onion granules, this can be substituted for garlic powder.
Parsley- I like to use this herb in most of my seasoning. It's amazing.
Italian seasoning- This is a combination of different herbs. I have a great homemade Italian seasoning recipe that you can use to make yours or use storebought.
Dill- This goes well with veggies but you can leave it out.
Black pepper - Fresh ground is best. This can be replaced with cayenne pepper or chili.
Salt- You can leave this out if you prefer the seasoning to not have salt.

Step 2- Mix them until they are well combined.

It's ready to use or store.
Once all the ingredients are fully mixed, put the seasoning in an airtight container and use it when needed.
How To Season Vegetables
Seasoning vegetables is super simple with this mix. There's no specific amount that you need to stick to religiously but I recommend using 1 teaspoon of seasoning for every 2 cups of vegetables.
How To Season Vegetables- Place the vegetables in a bowl and drizzle with some oil. Sprinkle the seasoning and salt over the veggies and mix till the veggies are evenly coated.
Cook as desired.
Helpful Tips
- Adjust the pepper to how you like it.
- You can experiment with different herbs and spices
- This makes 3 tablespoons which is enough for kg vegetables. You can double or multiply to suit your requirements.
- Be generous with the seasoning. I like to be a little more generous with the seasoning so if you like a little extra flavor just like me, adding a little extra wouldn't hurt.
- Add a squeeze of lemon on the veggies- Nothing beats a fresh, bright, tangy note of lemon when it comes to roasted foods, and vegetables are no exception.

Do you use oil to roast vegetables?
Yes, oil is necessary to roast vegetables. As mentioned, you can ideally use olive oil or the purpose. However, if that's not present for some reason, you can use any other oil with a high smoking point, like canola oil.
Storage
To store, transfer the seasoning to an airtight container or spice jar, label and store it in a cool, dry place. Keep it away from direct sunlight. The seasoning will keep well for 6-12 months.
